Ingredients
2 cups shredded cooked chicken
¼ cup ranch seasoning (ensure it’s sugar-free for keto)
1 egg (to bind)
Oil for frying (optional — use avocado oil or coconut oil)
Instructions
In a bowl, mix shredded chicken and ranch seasoning until well combined.
Add the egg and stir until mixture holds together.
Scoop small portions and shape into small patties or balls using your hands.
Heat a skillet over medium-high heat and add a drizzle of oil if needed.
Cook each fritter for 2–3 minutes per side until golden brown and crispy.
OR Bake at 400°F (200°C) for 12–15 minutes , flipping halfway through.
Serve warm with extra ranch, guacamole, or as a topping for salads or wraps.
