Ingredients
4 large potatoes, peeled and diced (about 2 lbs)
1 medium onion, finely chopped
4 cups chicken or vegetable broth
2 tablespoons butter
Instructions
In a large pot, melt butter over medium heat. Add chopped onions and sauté until translucent.
Add diced potatoes to the pot and pour in the broth. Bring to a boil.
Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
Use an immersion blender to blend the soup to your desired consistency. Season with salt and pepper to taste. Serve hot.
