Ingredients
Scale
- 1 cup long-grain white rice (or jasmine/basmati)
- 1 (10.5 oz) can condensed cream of mushroom soup (or cream of chicken)
- 1½ cups water
- ½ cup frozen peas & carrots mix (or mixed vegetables)
- ¼ tsp garlic powder
- Optional: salt & pepper to taste, shredded cheddar or parsley for topping
✅ That’s it—just 5 core ingredients!
Instructions
- Combine: In a medium saucepan, stir together rice, soup, water, frozen veggies, and garlic powder.
- Simmer: Bring to a boil over medium-high heat. Reduce heat to low, cover, and simmer 20–25 minutes, until rice is tender and liquid is absorbed.
- Fluff & serve: Remove from heat. Let stand covered 5 minutes. Fluff with a fork. Season with salt and pepper if needed.
- Optional: Top with shredded cheese or fresh parsley before serving.
💡 Pro Tips:
– For extra flavor, sauté ¼ cup diced onion before adding other ingredients.
– Use low-sodium soup if watching salt intake.
– Make it creamy: Stir in 2 tbsp sour cream or butter at the end!
