Angel Chicken Rice: The Ultimate Creamy Comfort Food Dinner

Ingredients

• 1 lb chicken breast, cooked and shredded • 8 oz angel hair pasta, broken into pieces • 2 cups chicken broth • 1 cup long grain rice • 1 onion, diced • 2 cloves garlic, minced • 2 tbsp butter • 2 tbsp olive oil • 1 cup sour cream • 1 cup cheddar cheese, shredded • 2 tbsp fresh parsley, chopped • 1 tsp thyme • Salt and pepper to taste


Instructions

  1. Heat olive oil in large skillet
  2. Sauté onion and garlic until soft
  3. Add chicken broth, rice, and pasta pieces
  4. Bring to boil, then reduce heat
  5. Cover and simmer 15-20 minutes until rice is tender
  6. Stir in butter and season with salt and pepper
  7. In separate pan, heat sour cream gently
  8. Fold sour cream into rice mixture
  9. Add shredded chicken and thyme
  10. Stir in half the cheese
  11. Transfer to baking dish
  12. Top with remaining cheese
  13. Bake 15 minutes at 350°F until bubbly
  14. Garnish with fresh parsley
