1 26-ounce bag of frozen French fries
1 pound bacon
1 8-ounce bag shredded Colby Jack Cheese
1 cup sour cream
2 jalapenos seeded and chopped.
2 teaspoons fresh lime juice
½ teaspoon salt
1 teaspoon onion powder
1 teaspoon garlic powder
4 Tablespoons cilantro chopped.


Instructions

Line a baking sheet with foil or parchment paper and add the bag of frozen French fries in a single layer.
Bake the French fries according to package directions.
Chop the bacon and add to a frying pan. Cook on medium until the bacon is cooked and crumbly. Remove to a paper towel to drain.
Next, add the sour cream, cilantro, 2 Tablespoons of the diced jalapeno, lime juice, salt, onion powder and garlic powder to a food processor.
Process the ingredients on high until it is smooth and fully integrated.
Once the French fries are done baking, set them aside and reset the oven temperature to 400 degrees.
Sprinkle the shredded cheese over the French fries and then sprinkle on the bacon.
Place the French fries back into the oven and cook for 5 minutes or until the cheese is melted and bubbly.
