Ingredients
• 1 lb (450g) boneless chicken breast or thighs, diced
• 6 strips bacon, cooked and crumbled
• 1 tbsp olive oil
• 1 packet ranch seasoning (or 2 tbsp homemade: 1 tsp garlic powder, 1 tsp onion powder, 1 tsp dill, ½ tsp parsley, ½ tsp salt, ¼ tsp pepper)
• ½ cup water or chicken broth
• 8 small flour or corn tortillas
• 1 cup shredded cheddar or Mexican cheese blend
• Optional toppings:
• Chopped lettuce or cabbage
• Diced tomatoes
• Sliced avocado or guacamole
• Sour cream or Greek yogurt
• Sliced jalapeños
Instructions
- In a skillet over medium heat, warm olive oil. Add diced chicken and cook 5–6 minutes until lightly browned.
- Stir in ranch seasoning and water. Simmer 8–10 minutes, stirring occasionally, until chicken is cooked through and sauce thickens.
- Stir in half the crumbled bacon and shredded cheese. Cook 1–2 minutes more until cheese melts.
- Warm tortillas in a dry skillet or microwave for 20 seconds to make them pliable.
- Spoon chicken mixture into tortillas.
- Top with remaining bacon and your favorite toppings.
