Bacon Ranch Chicken Tacos

Ingredients

• 1 lb (450g) boneless chicken breast or thighs, diced
• 6 strips bacon, cooked and crumbled
• 1 tbsp olive oil
• 1 packet ranch seasoning (or 2 tbsp homemade: 1 tsp garlic powder, 1 tsp onion powder, 1 tsp dill, ½ tsp parsley, ½ tsp salt, ¼ tsp pepper)
• ½ cup water or chicken broth
• 8 small flour or corn tortillas
• 1 cup shredded cheddar or Mexican cheese blend
• Optional toppings:
• Chopped lettuce or cabbage
• Diced tomatoes
• Sliced avocado or guacamole
• Sour cream or Greek yogurt
• Sliced jalapeños


Instructions

  1. In a skillet over medium heat, warm olive oil. Add diced chicken and cook 5–6 minutes until lightly browned.
  2. Stir in ranch seasoning and water. Simmer 8–10 minutes, stirring occasionally, until chicken is cooked through and sauce thickens.
  3. Stir in half the crumbled bacon and shredded cheese. Cook 1–2 minutes more until cheese melts.
  4. Warm tortillas in a dry skillet or microwave for 20 seconds to make them pliable.
  5. Spoon chicken mixture into tortillas.
  6. Top with remaining bacon and your favorite toppings.

Serve immediately while warm and cheesy!

💡 Make it ahead: Cook filling and store in the fridge up to 3 days. Reheat and assemble when ready.
