Ingredients
• 1 round sourdough loaf (about 8–9 inches wide)
• 1 wheel (8 oz) Brie cheese, rind on (or Cambozola for extra creaminess)
• 2 tbsp honey or maple syrup
• ¼ cup chopped walnuts or pecans
• 2 tbsp dried cranberries or cherries
• 1 tsp fresh rosemary, chopped (or thyme)
• Optional: 1/4 tsp chili flakes for heat, or sliced apples & crackers for serving
Instructions
- Prep the bread: Slice off the top of the sourdough loaf. Hollow out the center, leaving about a ½-inch thick shell. Tear the removed bread into bite-sized pieces—great for dipping later!
- Preheat oven to 350°F (175°C).
- Place the Brie wheel into the bread bowl so it fits snugly.
- Drizzle honey evenly over the top of the cheese.
- Sprinkle with nuts, dried fruit, rosemary, and chili flakes (if using).
- Replace the bread lid and place the whole loaf on a baking sheet.
- Bake 20–25 minutes, until the Brie is soft and gooey when tested with a knife.
- Remove lid before serving to reveal the melted, bubbly center.
- Serve warm with the reserved bread chunks, apple slices, and crackers for dipping.
