2 cups cooked chicken, shredded

4 large flour tortillas

1 cup shredded cheddar or Mexican blend cheese

1/2 cup salsa

1/2 tsp cumin

1/2 tsp paprika

Salt & pepper to taste

Cooking spray or 1 tbsp olive oil
Instructions

Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a bowl, mix shredded chicken, cheese, salsa, cumin, paprika, salt, and pepper.

Spoon the chicken mixture onto the center of each tortilla.

Fold in the sides and roll tightly to form chimichangas.

Place chimichangas on the baking sheet and lightly spray or brush with olive oil.

Bake for 15–20 minutes, flipping halfway, until golden and crispy.

Serve hot with sour cream, guacamole, or extra salsa.
