Ingredients
• 1 tbsp butter or olive oil
• 1 clove garlic, minced
• 2 tbsp all-purpose flour (or cornstarch for GF)
• ½ cup beer (lager, pale ale, or stout)
• 1 cup milk (dairy or plant-based)
• 2 cups shredded sharp cheddar cheese (divided)
• ½ tsp dry mustard (or 1 tsp Dijon)
• ½ tsp Worcestershire sauce
• ¼ tsp smoked paprika
• Salt & pepper to taste
• Optional: dash of hot sauce or cayenne for heat
Instructions
- In a saucepan over medium heat, melt butter. Sauté garlic 30 seconds until fragrant.
- Whisk in flour and cook 1 minute (don’t brown).
- Gradually whisk in beer and milk until smooth. Simmer 3–4 minutes until slightly thickened.
- Reduce heat to low. Stir in 1 ½ cups cheddar, mustard, Worcestershire, paprika, salt, and pepper. Mix until melted and creamy.
- Taste and adjust seasoning—add more beer for tang or cheese for richness.
- Serve warm with:
→ Pretzel rods, tortilla chips, or crackers
→ Sliced apples, celery, or broccoli
→ As a topping for baked potatoes or steak
