Ingredients

For the Meatballs:

1 lb ground beef (or mix with pork or turkey)
¼ cup grated Parmesan cheese (or nutritional yeast for dairy-free)
¼ cup finely chopped onion or 1 tsp garlic powder
½ tsp dried oregano
½ tsp dried basil
¼ tsp red pepper flakes (optional)
Salt and pepper to taste
1 egg (to bind)
¼ cup almond flour or crushed pork rinds (for keto/low-carb option)
For the Marinara Sauce (Low Carb):

1 cup sugar-free marinara sauce (check label or make your own)
1 tbsp olive oil
2 cloves garlic, minced
1 tsp dried oregano
½ tsp salt
Fresh basil (optional, for garnish)


Instructions

Preheat oven to 375°F (190°C).
In a bowl, mix ground beef, Parmesan, onion (or garlic powder), egg, almond flour, oregano, basil, salt, and pepper until just combined.
Roll into 1–1.5 inch balls and place on a lined baking sheet.
Bake for 15–18 minutes or until golden and cooked through.
For the marinara: Heat olive oil in a skillet over medium heat. Add garlic and sauté for 1 minute.
Stir in marinara sauce and oregano. Simmer for 5–7 minutes.
Add baked meatballs to the sauce and toss to coat. Let simmer together for 5 minutes.
Serve warm with zucchini noodles, cauliflower rice, or keto-friendly bread.
