Ingredients

6 medium russet potatoes, peeled and diced

1 small onion, chopped

3 cloves garlic, minced

4 cups chicken or vegetable broth

1½ cups milk (or half & half for extra creaminess)

½ cup sour cream

1 cup shredded cheddar cheese

4 slices bacon, cooked and crumbled (optional)

2 tbsp butter

Salt & pepper to taste

Optional toppings: green onions, extra cheese, bacon bits


Instructions

In a large pot, melt butter over medium heat. Add onions and garlic, sauté until soft.

Add diced potatoes and broth. Bring to a boil, then reduce heat and simmer for 15–20 minutes or until potatoes are tender.

Use a potato masher for a chunky texture or immersion blender for smooth soup.

Stir in milk, sour cream, cheese, and season with salt & pepper. Simmer 5 more minutes.

Serve hot, topped with bacon, cheese, and green onions if desired!
