Ingredients
Ingredients : 3 cups cooked pasta (penne, rotini, or your fave)
6 slices bacon (cooked & crumbled)
2 cups chopped romaine or iceberg lettuce
1 cup cherry tomatoes (halved)
1/4 cup red onion (thinly sliced) – optional
1/2 cup shredded cheddar or mozzarella – optional
Dressing: 1/2 cup mayonnaise
1 tbsp lemon juice or vinegar
1 tsp Dijon mustard
Salt & pepper to taste
Instructions
Cook pasta, drain, and let cool.
Cook bacon until crispy, then crumble.
In a bowl, whisk together mayo, lemon juice, mustard, salt & pepper.
Combine pasta, bacon, lettuce, tomatoes, and onion.
Toss everything with the dressing until coated.
Chill for 30 mins before serving for best flavor!
