Ingredients

2 cups biscuit mix (or use 1 cup almond flour + ¼ cup coconut flour + ½ tsp baking powder + pinch of salt)
½ lb breakfast sausage, cooked and crumbled
4 oz cream cheese or goat cheese, softened
4 large eggs, scrambled and cooked
½ cup shredded cheddar cheese
Optional: green onions, hot sauce, or spinach for extra flavor


Instructions

Preheat oven to 350°F (175°C).
If using homemade biscuit dough, mix dry ingredients and add ¼ cup melted butter or coconut oil and 2–4 tbsp water/milk to form a soft dough.
Roll out the dough on parchment paper to about ½-inch thickness. Cut into rounds using a biscuit cutter or glass.
Flatten each biscuit round and place a spoonful of sausage, scrambled eggs, and cheese in the center.
Fold the dough over and seal the edges to form a stuffed biscuit.
Place on a lined baking sheet and bake for 15–18 minutes until golden and firm.
Serve warm for a satisfying, high-protein breakfast!
