Ingredients
• 2 cups fresh or frozen broccoli florets, finely chopped and steamed (thawed if frozen)
• 1 cup shredded cheddar cheese (or mozzarella)
• ½ cup cream cheese, softened (or dairy-free alternative)
• ½ cup almond flour or breadcrumbs (gluten-free if needed)
• 1 egg, beaten
• ½ tsp garlic powder
• ½ tsp onion powder
• ¼ tsp salt
• ¼ tsp black pepper
• Optional: pinch of cayenne or smoked paprika for heat
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, combine steamed broccoli, cheddar, cream cheese, almond flour, egg, garlic powder, onion powder, salt, pepper, and cayenne (if using). Mix well.
- Roll mixture into 1-inch balls (lightly grease hands if sticky). Place on the baking sheet.
- Bake 18–22 minutes, until golden and firm.
- Let cool slightly—they hold together better when warm.
