Broccoli, Rice, Cheese, and Chicken Casserole: A Comfort Food Classic

Ingredients

• 2 cups cooked rice • 2 cups cooked chicken, shredded • 2 cups broccoli florets, steamed • 1 cup cheddar cheese, shredded • 1 cup mozzarella cheese, shredded • 1 cup heavy cream • ½ cup sour cream • 1 onion, diced • 2 cloves garlic, minced • 3 tbsp butter • 2 tbsp flour • 1 cup chicken broth • 2 tbsp fresh parsley, chopped • 1 tsp thyme • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F
  2. Grease 9×13 inch baking dish
  3. In saucepan, melt butter and sauté onion and garlic
  4. Whisk in flour and cook 1 minute
  5. Gradually add chicken broth, whisking constantly
  6. Add heavy cream and bring to simmer
  7. Cook until thickened, 3-5 minutes
  8. Remove from heat and stir in sour cream
  9. Add cheddar cheese, stir until melted
  10. Season with thyme, salt, and pepper
  11. In baking dish, layer rice, chicken, and broccoli
  12. Pour cheese sauce over ingredients
  13. Top with mozzarella cheese
  14. Bake 25-30 minutes until bubbly and golden
  15. Garnish with fresh parsley before serving
