Cajun Chicken Sloppy Joes 🌶️🍗

Ingredients

• 1 lb (450g) boneless chicken breast or thighs, cooked and shredded
• 1 tbsp olive oil
• ½ cup diced onion
• ½ cup diced bell pepper (any color)
• 2 cloves garlic, minced
• ¾ cup ketchup
• 2 tbsp Dijon mustard
• 1 tbsp apple cider vinegar
• 1–2 tsp Cajun seasoning (or homemade: ½ tsp each paprika, garlic powder, onion powder, oregano; ¼ tsp cayenne, thyme, black pepper)
• ½ tsp smoked paprika
• Salt to taste (optional—Cajun mix is salty)
• 4 soft hamburger buns (toasted if desired)
• Optional toppings: coleslaw, pickles, sliced jalapeños


Instructions

  1. In a skillet over medium heat, warm olive oil. Sauté onion and bell pepper 5–6 minutes until tender. Add garlic and cook 30 seconds more.
  2. Stir in shredded chicken, ketchup, mustard, vinegar, Cajun seasoning, and smoked paprika.
  3. Simmer 8–10 minutes, stirring occasionally, until thickened and flavors meld. Taste and adjust—add more spice, vinegar, or a pinch of sugar if needed.
  4. Toast buns lightly if desired.
  5. Spoon mixture onto bun bottoms. Top with your favorite fixings like cool coleslaw or pickles.
  6. Serve immediately while warm and saucy!

Great for game day, weeknight dinners, or meal prep!

💡 Make it creamy: Stir in 2 tbsp cream cheese or sour cream at the end.
