Ingredients
• 1 lb (450g) boneless chicken breast or thighs, cooked and shredded
• 1 tbsp olive oil
• ½ cup diced onion
• ½ cup diced bell pepper (any color)
• 2 cloves garlic, minced
• ¾ cup ketchup
• 2 tbsp Dijon mustard
• 1 tbsp apple cider vinegar
• 1–2 tsp Cajun seasoning (or homemade: ½ tsp each paprika, garlic powder, onion powder, oregano; ¼ tsp cayenne, thyme, black pepper)
• ½ tsp smoked paprika
• Salt to taste (optional—Cajun mix is salty)
• 4 soft hamburger buns (toasted if desired)
• Optional toppings: coleslaw, pickles, sliced jalapeños
Instructions
- In a skillet over medium heat, warm olive oil. Sauté onion and bell pepper 5–6 minutes until tender. Add garlic and cook 30 seconds more.
- Stir in shredded chicken, ketchup, mustard, vinegar, Cajun seasoning, and smoked paprika.
- Simmer 8–10 minutes, stirring occasionally, until thickened and flavors meld. Taste and adjust—add more spice, vinegar, or a pinch of sugar if needed.
- Toast buns lightly if desired.
- Spoon mixture onto bun bottoms. Top with your favorite fixings like cool coleslaw or pickles.
- Serve immediately while warm and saucy!
