Carrot Cake Banana Bread: Moist, Flavorful & Perfect for All Seasons

Ingredients

• 3 ripe bananas, mashed • ½ cup vegetable oil • ½ cup brown sugar • 2 eggs • 2 cups all-purpose flour • 1 tsp baking soda • ½ tsp salt • 1 tsp cinnamon • ½ tsp nutmeg • ¼ tsp ginger • 1 cup grated carrots • ½ cup chopped walnuts • ½ cup raisins (optional)

FOR CREAM CHEESE FROSTING: • 4 oz cream cheese, softened • 2 tbsp butter, softened • 1 cup powdered sugar • ½ tsp vanilla extract


Instructions

  1. Preheat oven to 350°F
  2. Grease 9×5 inch loaf pan
  3. Mix mashed bananas, oil, and brown sugar
  4. Beat in eggs one at a time
  5. Combine flour, baking soda, salt, and spices
  6. Alternate adding flour mixture and banana mixture
  7. Fold in carrots, walnuts, and raisins
  8. Pour into prepared pan
  9. Bake 50-60 minutes until toothpick comes clean
  10. Cool completely before frosting
  11. Beat cream cheese and butter until smooth
  12. Gradually add powdered sugar and vanilla
  13. Spread frosting over cooled bread
  14. Slice and serve
