Ingredients
• 3 ripe bananas, mashed • ½ cup vegetable oil • ½ cup brown sugar • 2 eggs • 2 cups all-purpose flour • 1 tsp baking soda • ½ tsp salt • 1 tsp cinnamon • ½ tsp nutmeg • ¼ tsp ginger • 1 cup grated carrots • ½ cup chopped walnuts • ½ cup raisins (optional)
FOR CREAM CHEESE FROSTING: • 4 oz cream cheese, softened • 2 tbsp butter, softened • 1 cup powdered sugar • ½ tsp vanilla extract
Instructions
- Preheat oven to 350°F
- Grease 9×5 inch loaf pan
- Mix mashed bananas, oil, and brown sugar
- Beat in eggs one at a time
- Combine flour, baking soda, salt, and spices
- Alternate adding flour mixture and banana mixture
- Fold in carrots, walnuts, and raisins
- Pour into prepared pan
- Bake 50-60 minutes until toothpick comes clean
- Cool completely before frosting
- Beat cream cheese and butter until smooth
- Gradually add powdered sugar and vanilla
- Spread frosting over cooled bread
- Slice and serve
