Flaky, buttery, and filled with melted cheese — these keto-friendly stuffed biscuits are the perfect low-carb snack, breakfast, or side for your favorite meals!


Ingredients

2 cups biscuit mix (or use 1 cup almond flour + ¼ cup coconut flour + ½ tsp baking powder + pinch of salt)
4 oz cream cheese or goat cheese, softened
½ cup shredded cheddar or mozzarella cheese
2 tbsp melted butter or coconut oil
2–4 tbsp water or unsweetened almond milk (as needed)
1 large egg


Instructions

Preheat oven to 350°F (175°C).
If using homemade dough, mix almond flour, coconut flour, baking powder, and salt in a bowl. Add egg, melted butter, and water/milk as needed to form a soft dough.
Roll out the dough on parchment paper to about ½-inch thickness. Cut into rounds using a biscuit cutter or glass.
Place a spoonful of cream cheese in the center of each round. Top with shredded cheese.
Fold over and seal the edges like a turnover.
Bake for 15–18 minutes until golden and flaky.
Serve warm for that gooey, cheesy inside with a crispy outside!
