Ingredients
• 1 lb ground beef (80/20 for best flavor)
• 4 slices bacon, chopped (reserve 1 tbsp drippings, drain rest)
• ½ small onion, finely diced
• 2 cloves garlic, minced
• 3 cups low-sodium beef broth
• 1 cup whole milk (or half-and-half for extra richness)
• 1 cup shredded sharp cheddar cheese
• ½ cup cream cheese, cubed
• ¼ cup dill pickle relish (or ⅓ cup finely chopped cornichons)
• 1 tbsp yellow mustard
• 1 tsp Worcestershire sauce
• ½ tsp garlic powder
• Salt & black pepper to taste
• Optional toppings: extra shredded cheddar, crispy bacon bits, sliced green onions
Instructions
- In a large pot, cook bacon over medium heat until crisp. Remove with a slotted spoon; set aside. Leave 1 tbsp drippings in pot.
- Add ground beef and onion; cook until beef is browned and onion is soft (~6 mins). Drain excess fat if needed. Stir in garlic; cook 30 sec.
- Pour in broth, milk, mustard, Worcestershire, garlic powder, salt, and pepper. Bring to a gentle simmer (do not boil).
- Reduce heat to low. Stir in cream cheese until melted and smooth. Add cheddar, stirring until fully incorporated and creamy.
- Stir in pickle relish. Simmer 5 mins (do not boil—heat gently to prevent separation).
- Ladle into bowls. Top with reserved bacon, extra cheese, and green onions. Serve with crusty bread—or enjoy as-is!
