Cheeseburger Soup

Ingredients

• 1 lb ground beef (80/20 for best flavor)
• 4 slices bacon, chopped (reserve 1 tbsp drippings, drain rest)
• ½ small onion, finely diced
• 2 cloves garlic, minced
• 3 cups low-sodium beef broth
• 1 cup whole milk (or half-and-half for extra richness)
• 1 cup shredded sharp cheddar cheese
• ½ cup cream cheese, cubed
• ¼ cup dill pickle relish (or ⅓ cup finely chopped cornichons)
• 1 tbsp yellow mustard
• 1 tsp Worcestershire sauce
• ½ tsp garlic powder
• Salt & black pepper to taste
• Optional toppings: extra shredded cheddar, crispy bacon bits, sliced green onions


Instructions

  1. In a large pot, cook bacon over medium heat until crisp. Remove with a slotted spoon; set aside. Leave 1 tbsp drippings in pot.
  2. Add ground beef and onion; cook until beef is browned and onion is soft (~6 mins). Drain excess fat if needed. Stir in garlic; cook 30 sec.
  3. Pour in broth, milk, mustard, Worcestershire, garlic powder, salt, and pepper. Bring to a gentle simmer (do not boil).
  4. Reduce heat to low. Stir in cream cheese until melted and smooth. Add cheddar, stirring until fully incorporated and creamy.
  5. Stir in pickle relish. Simmer 5 mins (do not boil—heat gently to prevent separation).
  6. Ladle into bowls. Top with reserved bacon, extra cheese, and green onions. Serve with crusty bread—or enjoy as-is!
