• 8 oz lasagna noodles (oven-ready or cooked)
• 2 cups cooked chicken, shredded (rotisserie works great!)
• ½ cup hot sauce (like Frank’s RedHot)
• ¼ cup butter (or ghee)
• 1 cup crumbled blue cheese (or Gorgonzola)
• 2 cups shredded mozzarella cheese (divided)
• 1 cup ricotta cheese
• ½ cup grated Parmesan cheese
• 1 clove garlic, minced
• 1 tsp onion powder
• Salt & black pepper to taste
• ½ cup ranch dressing (plus extra for drizzling)
• Fresh chives or parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a bowl, mix shredded chicken and hot sauce. Set aside.
- In another bowl, combine ricotta, ½ cup mozzarella, Parmesan, garlic, onion powder, salt, and pepper.
- Spread ¼ cup ranch dressing on the bottom of the dish.
- Layer:
→ 4 lasagna noodles (or as needed)
→ Ricotta mixture
→ Buffalo chicken
→ Sprinkle of blue cheese - Repeat layers, ending with noodles. Top with remaining mozzarella.
- Cover with foil and bake 25 minutes.
- Uncover and bake 10–15 more minutes until bubbly and golden.
- Let rest 5 minutes. Drizzle generously with ranch dressing and sprinkle with chives.
