Ingredients
• 2 lbs chicken breast, cooked and shredded • 2 bell peppers, sliced • 1 large onion, sliced • 1 cup sour cream • 1 cup cream of chicken soup • 2 cups cheddar cheese, shredded • 1 cup mozzarella cheese, shredded • 1 tsp cumin • 1 tsp chili powder • ½ tsp garlic powder • 2 tbsp olive oil • 2 tbsp fresh cilantro, chopped • 8 oz cream cheese, cubed • Tortilla chips for serving
Instructions
- Preheat oven to 375°F
- Heat olive oil in large skillet
- Sauté bell peppers and onion until tender
- Add cumin, chili powder, and garlic powder
- Stir in shredded chicken
- In separate bowl, mix sour cream and cream of chicken soup
- Grease 9×13 inch baking dish
- Layer half the chicken mixture in dish
- Add half the cream cheese cubes
- Pour half the soup mixture over top
- Repeat layers
- Top with both cheeses
- Bake 25-30 minutes until bubbly and golden
- Garnish with fresh cilantro
- Serve with tortilla chips
