Cheesy Chicken Fajita Casserole Delight: A One-Pan Fiesta of Flavor

Ingredients

• 2 lbs chicken breast, cooked and shredded • 2 bell peppers, sliced • 1 large onion, sliced • 1 cup sour cream • 1 cup cream of chicken soup • 2 cups cheddar cheese, shredded • 1 cup mozzarella cheese, shredded • 1 tsp cumin • 1 tsp chili powder • ½ tsp garlic powder • 2 tbsp olive oil • 2 tbsp fresh cilantro, chopped • 8 oz cream cheese, cubed • Tortilla chips for serving


Instructions

  1. Preheat oven to 375°F
  2. Heat olive oil in large skillet
  3. Sauté bell peppers and onion until tender
  4. Add cumin, chili powder, and garlic powder
  5. Stir in shredded chicken
  6. In separate bowl, mix sour cream and cream of chicken soup
  7. Grease 9×13 inch baking dish
  8. Layer half the chicken mixture in dish
  9. Add half the cream cheese cubes
  10. Pour half the soup mixture over top
  11. Repeat layers
  12. Top with both cheeses
  13. Bake 25-30 minutes until bubbly and golden
  14. Garnish with fresh cilantro
  15. Serve with tortilla chips
