Ingredients
2 lbs baby potatoes, halved or quartered
2 tbsp olive oil
1 packet (1 oz) ranch seasoning mix
2 cloves garlic, minced
1 cup shredded cheddar cheese
2 tbsp chopped fresh parsley (optional)
Salt & pepper to taste
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment or foil.
In a large bowl, toss potatoes with olive oil, ranch seasoning, garlic, salt, and pepper until well coated.
Spread potatoes in a single layer on the baking sheet.
Roast for 25–30 minutes, flipping halfway through, until golden and tender.
Sprinkle with shredded cheese and return to oven for 5 more minutes, or until melted.
Garnish with chopped parsley and serve hot!
