Ingredients
INGREDIENTS:Â 4 medium potatoes, diced (about 2 lbs)
 1 cup shredded cheddar cheese (about 4 oz)
 4 large eggs
 1/2 cup milk
 1/2 cup cooked ham or bacon, chopped (optional)
 1/4 cup green onions or chives, chopped
 2 tablespoons butter
 Salt and pepper to taste
Instructions
1. Boil diced potatoes in salted water for 10-15 minutes until fork-tender. Drain and set aside.
2. In a skillet, melt butter over medium heat. Add potatoes and cook until golden, about 5-7 minutes.
3. If using, add ham or bacon and heat for 2-3 minutes.
4. Whisk eggs, milk, salt, and pepper in a bowl.
5. Pour egg mixture over potatoes, stir gently, and cook for about 5 minutes.
6. Sprinkle cheese on top, cover, and cook for 2-3 minutes until melted.
7. Garnish with green onions or chives and serve warm. Enjoy!
