Ingredients
• 1 lb (450g) smoked sausage or kielbasa, sliced (or plant-based alternative)
• 2 lbs (900g) baby potatoes, halved or quartered
• 2 tbsp olive oil
• 1 small onion, diced
• 2 cloves garlic, minced
• 1 packet ranch seasoning (or 2 tbsp homemade: 1 tsp each garlic powder, onion powder, dill, parsley; ½ tsp salt, ¼ tsp pepper)
• ½ cup milk (dairy or plant-based)
• 2 cups shredded cheddar cheese (divided)
• Salt & black pepper to taste
• Optional: chopped green onions or bacon bits for garnish
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss potatoes with 1 tbsp olive oil, salt, and pepper. Spread on the tray and roast 20 minutes, flipping halfway.
- In a skillet over medium heat, warm remaining oil. Cook sausage slices 5–6 minutes until browned. Add onion and cook 4–5 minutes until soft. Stir in garlic and ranch seasoning; cook 30 seconds more.
- Remove potatoes from oven. Pour sausage mixture over them. Stir in milk and 1 ½ cups cheese. Mix gently.
- Sprinkle with remaining ½ cup cheese. Return to oven and bake 15–20 minutes, until bubbly and golden.
- Let cool 5 minutes. Garnish with green onions or bacon if desired. Serve hot!
