Ingredients
• 4 long garlic bread baguettes or hoagie rolls (store-bought or homemade)
• 2 tbsp butter, softened
• 1 tsp garlic powder
• 1 tbsp fresh parsley, chopped (plus extra for garnish)
For the filling:
• 2 cups cooked chicken, shredded or diced
• 1 cup fettuccine or pasta pieces, cooked
• 1 cup alfredo sauce (homemade or store-bought)
• 1 cup shredded mozzarella or Italian blend cheese (divided)
• ¼ cup grated Parmesan cheese
• Salt & pepper to taste
• Optional: sautéed mushrooms, spinach, or sun-dried tomatoes
Instructions
- Prepare the rolls: Slice each roll lengthwise, cutting down but not all the way through (like a book). Set aside.
- Make the garlic butter: Mix softened butter, garlic powder, and parsley. Spread inside each roll.
- Make the filling: In a bowl, combine chicken, cooked pasta, alfredo sauce, ¾ cup mozzarella, Parmesan, salt, and pepper. Mix well. Add optional veggies if desired.
- Stuff the mixture into the rolls, pressing gently to fill.
- Place subs on a baking sheet. Top with remaining ¼ cup mozzarella.
- Bake at 375°F (190°C) for 15–20 minutes, until hot, bubbly, and golden on top.
- Let cool 2 minutes, then slice and serve warm!
