Ingredients
2 cups cooked white rice (cold, day-old is best)
1 tbsp sesame oil or olive oil
4 strips bacon, diced
1 chicken breast, cooked and cubed
½ cup diced carrots
½ cup green peas (fresh or frozen)
2 eggs, lightly beaten
2 green onions, finely chopped
2 tbsp soy sauce
1 tbsp oyster sauce
Salt and pepper to taste
Instructions
In a large pan, cook diced bacon over medium heat until crispy. Remove and set aside.
In the same pan, add oil and stir-fry carrots and peas until tender.
Push veggies to one side, pour in eggs, and scramble until just set.
Add cooked rice, chicken, and bacon to the pan. Stir well to combine.
Drizzle soy sauce and oyster sauce over everything, toss until evenly coated.
Sprinkle green onions on top and serve warm.
