• 2 cups cooked shredded chicken (rotisserie or grilled)
• ¾ cup diced deli ham (or Black Forest for smokiness)
• 1 cup shredded Swiss cheese (plus ¼ cup for topping)
• 1 (10.5 oz) can condensed cream of chicken soup (or 1¼ cups keto-friendly white sauce)
• ½ cup sour cream (or Greek yogurt)
• 1 tbsp Dijon mustard
• ½ tsp garlic powder
• ½ cup panko breadcrumbs (or keto: ¼ cup crushed pork rinds + 2 tbsp almond flour)
• 2 tbsp melted butter
• 1 tbsp fresh parsley, chopped (optional)
• Salt & black pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×9″ baking dish.
- In a large bowl, combine chicken, ham, 1 cup Swiss, soup, sour cream, Dijon, garlic powder, salt, and pepper. Mix gently.
- Spread evenly into dish. Top with remaining ¼ cup Swiss.
- Topping: Mix panko (or keto swap) and melted butter; sprinkle over cheese.
- Bake uncovered 25–30 mins—until bubbly and topping is golden crisp.
- Rest 5–10 mins. Garnish with parsley. Serve warm (great with steamed green beans or a simple salad).
