Ingredients

8 oz pasta (penne or rotini)

2 cups cooked chicken, shredded

1 cup frozen mixed vegetables (peas, carrots, corn)

2 tbsp butter

2 tbsp flour

1 1/2 cups chicken broth

1/2 cup milk
-
1/2 tsp thyme
-
Salt & pepper to taste

Optional: 1/4 cup grated Parmesan cheese
Instructions

Cook pasta according to package instructions; drain and set aside.

In a skillet, melt butter over medium heat and whisk in flour to form a roux.

Gradually add chicken broth and milk, stirring until smooth and slightly thickened.

Add thyme, salt, and pepper.

Stir in shredded chicken and frozen vegetables; cook 3–4 minutes until heated through.

Toss in cooked pasta and mix well.

Serve hot, topped with optional Parmesan cheese.
