Chicken Pot Pie Pasta – Creamy, Comforting, and Flavor-Packed

Ingredients

  • 8 oz pasta (penne or rotini)

  • 2 cups cooked chicken, shredded

  • 1 cup frozen mixed vegetables (peas, carrots, corn)

  • 2 tbsp butter

  • 2 tbsp flour

  • 1 1/2 cups chicken broth

  • 1/2 cup milk

  • 1/2 tsp thyme

  • Salt & pepper to taste

  • Optional: 1/4 cup grated Parmesan cheese


Instructions

  1. Cook pasta according to package instructions; drain and set aside.

  2. In a skillet, melt butter over medium heat and whisk in flour to form a roux.

  3. Gradually add chicken broth and milk, stirring until smooth and slightly thickened.

  4. Add thyme, salt, and pepper.

  5. Stir in shredded chicken and frozen vegetables; cook 3–4 minutes until heated through.

  6. Toss in cooked pasta and mix well.

  7. Serve hot, topped with optional Parmesan cheese.
