Ingredients

🥓 ½ cup pork rinds (blitzed)
🧀 ½ cup parmesan cheese
🥫 ½ cup mayonnaise
🌿 2 teaspoons Italian seasoning
🐔 3 chicken tenders (or breasts)


Instructions

1. Preheat oven to 350°F (177°C).
2. Cut the chicken tenders or chicken breasts into strips.
3. Add pork rinds to a food processor, blitz until breadcrumb consistency.
4. Combine the Parmesan cheese, Italian seasoning, and pork rinds in a shallow bowl; place mayo in a second bowl.
5. Dredge the chicken fingers through the mayo, coating completely.
6. Transfer to the breaded mixture (pork rinds, parmesan cheese, and seasoning). Coat the chicken tender thoroughly and place each chicken strip in an oven-safe casserole dish.
7. Bake for 22-25 minutes until golden brown and chicken reaches an internal temperature of 165°F.
