Ingredients
2 cups elbow macaroni, cooked and cooled
½ cup mayonnaise
1 tbsp yellow mustard
2 boiled eggs, chopped
½ cup celery, finely diced
¼ cup red bell pepper, diced
¼ cup red onion, finely diced
1 tbsp sweet pickle relish
Salt & pepper to taste
Optional: paprika or chopped parsley for garnish
Instructions
Cook macaroni according to package directions. Drain, rinse, and cool.
In a large bowl, mix mayo, mustard, and relish.
Add cooked pasta, chopped eggs, celery, bell pepper, and onion. Stir to combine.
Season with salt and pepper to taste.
Chill for at least 1 hour before serving. Garnish with paprika or parsley if desired!
