INGREDIENTS: 2 ounces cream cheese (56g), at room temperature
3 large eggs, at room temperature
1/4 teaspoon cream of tartar
1/8 teaspoon coarse salt
Instructions
1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
2. In a medium bowl, beat cream cheese until smooth.
3. Separate eggs; add yolks to cream cheese and whites to another bowl.
4. Beat yolks with cream cheese until smooth.
5. Beat egg whites with cream of tartar and salt until stiff peaks form.
6. Gently fold egg whites into yolk mixture until combined.
7. Divide mixture into 8 mounds on the baking sheet, spacing 4 inches apart.
8. Bake for 25-30 minutes until golden.
