Country Fried Beef Chops with Bacon Gravy

Ingredients

• 4 boneless beef chuck or round steaks (about 6 oz each, ½ inch thick)
• Salt & black pepper to taste
• 1 cup all-purpose flour (or gluten-free blend)
• 1 tsp garlic powder
• 1 tsp onion powder
• ½ tsp smoked paprika
• 2 tbsp olive oil or vegetable oil
• 2 tbsp butter

For the bacon gravy:
• 6 strips bacon, cooked and crumbled (reserve 3 tbsp drippings)
• 3 tbsp reserved bacon drippings (or substitute butter/oil)
• 3 tbsp all-purpose flour
• 2 cups low-sodium beef broth
• ¼ cup whole milk or half-and-half (optional, for creaminess)
• Fresh parsley, chopped (for garnish)


Instructions

  1. Prepare the beef: Pound steaks gently to even thickness if needed. Season both sides generously with salt and pepper.
  2. In a shallow dish, mix flour, garlic powder, onion powder, and smoked paprika. Dredge each steak in the mixture, shaking off excess.
  3. In a large skillet over medium-high heat, warm olive oil and butter. Sear beef chops 3–4 minutes per side, until browned and cooked to your liking (medium is ~145°F). Remove and keep warm.
  4. Make the gravy: Pour off excess fat, leaving about 3 tbsp drippings. Sprinkle in flour and whisk constantly for 1–2 minutes to make a roux.
  5. Gradually whisk in beef broth until smooth. Bring to a simmer and cook 3–5 minutes until thickened.
  6. Stir in milk (if using) and half the crumbled bacon. Simmer 1 minute more.
  7. Taste and adjust seasoning—add more pepper, salt, or a splash of Worcestershire for depth.
  8. Serve beef chops hot, smothered in bacon gravy and sprinkled with remaining bacon. Garnish with fresh parsley.

• Creamy mashed potatoes or buttered egg noodles
• Steamed green beans or collard greens
• A warm dinner roll to soak up the gravy

💡 Make ahead: Gravy can be made in advance and reheated with a splash of broth.
