Ingredients

• 6 large bell peppers, tops cut off and seeded • 8 oz cream cheese, softened • ½ cup cheddar cheese, shredded • ½ cup mozzarella cheese, shredded • 1 lb ground beef or turkey • 1 onion, diced • 2 cloves garlic, minced • 1 cup cooked rice • 1 tsp paprika • ½ tsp cumin • ¼ cup fresh parsley, chopped • 2 tbsp olive oil • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F
  2. Place peppers in baking dish, cover with foil
  3. Bake 20 minutes until slightly tender
  4. Heat olive oil in large skillet
  5. Brown ground meat with onion and garlic
  6. Drain excess fat
  7. Add paprika, cumin, salt, and pepper
  8. Stir in cooked rice and parsley
  9. Beat cream cheese until smooth
  10. Mix in cheddar and mozzarella cheese
  11. Stuff peppers with meat mixture
  12. Top each pepper with cream cheese mixture
  13. Bake uncovered 25-30 minutes until bubbly
  14. Let rest 5 minutes before serving
