Ingredients
1 lb pork tenderloin, cut into medallions
Salt and pepper to taste
1 tsp garlic powder
1 tbsp olive oil or avocado oil (for searing)
2 tbsp unsalted butter
2 tbsp Dijon mustard
¼ cup heavy cream or full-fat coconut cream
¼ cup chicken broth or bone broth
1 tsp fresh thyme or ½ tsp dried
½ tsp lemon juice (optional, for brightness)
Fresh parsley (optional, for garnish)
Instructions
Season pork medallions with salt, pepper, and garlic powder.
Heat olive oil in a skillet over medium-high heat. Sear pork for 3–4 minutes per side until golden and cooked through. Remove and set aside.
In the same skillet, melt butter. Stir in Dijon mustard and cook for 1–2 minutes.
Add heavy cream, chicken broth, and thyme. Simmer for 3–5 minutes until sauce thickens slightly.
Return pork to the pan and simmer in the sauce for 2–3 minutes until fully coated and warmed through.
Optional: Stir in a splash of lemon juice before serving for extra depth of flavor.
Garnish with fresh parsley if desired and serve warm.
