Ingredients
¾ cup pastina (or any tiny pasta)
4 cups low-sodium vegetable broth
1 tbsp olive oil or vegan butter
¼ cup unsweetened plant-based milk (like oat or almond)
2 tbsp finely chopped parsley
2 tbsp vegan parmesan cheese (plus more for topping)
Salt & pepper to taste
Optional: lemon wedge for serving
Instructions
In a medium pot, heat olive oil over medium heat.
Pour in vegetable broth and bring to a boil.
Add pastina and cook, stirring occasionally, until tender (about 6–7 minutes).
Reduce heat to low, stir in plant-based milk and vegan parmesan until creamy.
Season with salt, pepper, and parsley.
Ladle into bowls, top with extra parmesan and a squeeze of lemon if desired.
Serve hot with crusty bread or on its own!
