Creamy Mushroom Chicken: A One-Pan Comfort Classic

Ingredients

 4 chicken breasts • 8 oz mushrooms, sliced • 1 cup heavy cream • ½ cup chicken broth • 4 tbsp butter • 2 tbsp olive oil • 3 cloves garlic, minced • 1 onion, diced • ½ cup Parmesan cheese, grated • 2 tbsp fresh thyme • 1 tbsp fresh parsley, chopped • 1 tsp lemon juice • Salt and pepper to taste


Instructions

  1. Season chicken breasts with salt and pepper
  2. Heat olive oil in large skillet over medium-high heat
  3. Cook chicken 6-7 minutes per side until golden
  4. Remove chicken and set aside
  5. In same skillet, melt butter
  6. Sauté onions until translucent
  7. Add mushrooms and cook until tender
  8. Add garlic and thyme, cook 1 minute
  9. Pour in chicken broth and scrape up browned bits
  10. Stir in heavy cream and Parmesan cheese
  11. Simmer until sauce thickens
  12. Return chicken to skillet
  13. Cook 5 minutes until heated through
  14. Stir in lemon juice and parsley
  15. Serve hot over rice or pasta
