Ingredients
4 chicken breasts • 8 oz mushrooms, sliced • 1 cup heavy cream • ½ cup chicken broth • 4 tbsp butter • 2 tbsp olive oil • 3 cloves garlic, minced • 1 onion, diced • ½ cup Parmesan cheese, grated • 2 tbsp fresh thyme • 1 tbsp fresh parsley, chopped • 1 tsp lemon juice • Salt and pepper to taste
Instructions
- Season chicken breasts with salt and pepper
- Heat olive oil in large skillet over medium-high heat
- Cook chicken 6-7 minutes per side until golden
- Remove chicken and set aside
- In same skillet, melt butter
- Sauté onions until translucent
- Add mushrooms and cook until tender
- Add garlic and thyme, cook 1 minute
- Pour in chicken broth and scrape up browned bits
- Stir in heavy cream and Parmesan cheese
- Simmer until sauce thickens
- Return chicken to skillet
- Cook 5 minutes until heated through
- Stir in lemon juice and parsley
- Serve hot over rice or pasta
