Creamy Mushroom Chicken and Wild Rice Soup: A Hearty, Comforting Bowl of Cozy Perfection

Ingredients

• 1 lb chicken breast, cooked and shredded • 8 oz mushrooms, sliced • 1 cup wild rice, rinsed • 6 cups chicken broth • 1 cup heavy cream • 1 onion, diced • 3 cloves garlic, minced • 2 tbsp butter • 2 tbsp flour • 1 tsp thyme • ½ tsp rosemary • 2 tbsp fresh parsley, chopped • Salt and pepper to taste


Instructions

  1. In large pot, combine wild rice and 3 cups chicken broth
  2. Bring to boil, then simmer 45-50 minutes until tender
  3. Heat butter in separate large pot
  4. Sauté onion and garlic until soft
  5. Add mushrooms and cook until tender
  6. Sprinkle flour over vegetables, stir well
  7. Gradually add remaining chicken broth, whisking constantly
  8. Add cooked wild rice and shredded chicken
  9. Stir in heavy cream, thyme, and rosemary
  10. Simmer 15 minutes until heated through
  11. Season with salt and pepper
  12. Garnish with fresh parsley before serving
