Crispy Broccoli Cheddar Rounds: A Low-Carb, Cheesy Delight for Any Occasion

Ingredients

INGREDIENTS:
🥦 1 (10oz) bag frozen broccoli rice (about 2 cups)
🧀 2 cups freshly shredded cheddar cheese
🥚 1 large egg
🌰 2 tbsp almond flour
🧂 seasoning to taste (garlic salt recommended)


Instructions

1. Cook broccoli rice in the microwave as per package instructions. Drain and squeeze out excess liquid; set aside to cool.
2. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
3. In a bowl, combine broccoli rice, shredded cheese, egg, almond flour, and seasoning.
4. Form 16 small balls and flatten them on the baking sheet.
5. Bake for 15 minutes, flip, and bake for another 8-10 minutes until golden.
6. Enjoy alone or with ranch dressing!
