Golden, crunchy bites packed with fresh okra and savory spice!
Ingredients
2 cups fresh okra, finely chopped
½ cup cornmeal
½ cup all-purpose flour
1 egg
⅓ cup buttermilk (or milk with 1 tsp vinegar)
1 small onion, finely diced
1 tsp garlic powder
½ tsp paprika
Salt & pepper to taste
Oil for frying
Instructions
In a large bowl, mix chopped okra, onion, cornmeal, flour, garlic powder, paprika, salt, and pepper.
Beat egg with buttermilk and add to the mixture. Stir until well combined (batter will be thick).
Heat oil in a skillet over medium-high heat.
Scoop heaping tablespoons of batter into hot oil and flatten slightly.
Fry 2–3 minutes per side until golden brown and crispy.
Drain on paper towels. Serve hot with dipping sauce or on their own!
