Ingredients
• 4 boneless, skinless chicken breasts (or thighs for extra juiciness)
• 1 (8 oz) block cream cheese, softened
• ½ cup (1 stick) unsalted butter
• ½ cup shredded mozzarella or provolone
• ½ cup grated Parmesan cheese
• 1 tsp garlic powder
• 1 tsp onion powder
• ½ tsp dried thyme (or 1 tbsp fresh)
• Salt & black pepper to taste
• Optional: ½ cup sliced mushrooms, ¼ cup sun-dried tomatoes, or 1 cup baby spinach
Instructions
- Place chicken in the bottom of a 4–6 quart slow cooker. Season with salt, pepper, garlic powder, and onion powder.
- In a bowl, combine softened cream cheese, butter, mozzarella, Parmesan, and thyme until smooth (microwave 20 sec if too stiff).
- Spoon mixture evenly over chicken, covering completely. Add optional mix-ins around sides.
- Cover and cook on LOW 4–5 hours or HIGH 2–2.5 hours, until chicken reaches 165°F and is fork-tender.
