Crockpot French Onion Chicken and Rice – A Comforting One-Pan Meal

Ingredients

– 1 yellow onion, sliced 🧅
– 1 (10.5-ounce) can French Onion Soup 🥫
– 1 ½ cups rice (uncooked) 🍚
– 3 cups beef broth 🍖
– 2 pounds boneless, skinless chicken breasts 🍗
– 1 (2-ounce) packet Lipton Onion Soup mix 🧂
– 1 cup mozzarella cheese, shredded 🧀
– 1 cup provolone cheese, shredded 🧀
– 1 cup fried onions 🧅

 


Instructions

1. **Prepare the Crockpot:**
Spray the inside of the crockpot with cooking spray.

2. **Layer the Ingredients:**
Place the chicken at the bottom of the crockpot. Add the sliced onion, French onion soup, rice, beef broth, and Lipton Onion Soup mix. Stir gently to mix everything together.

3. **Cook:**
Cover and cook on low for 5-6 hours or on high for 2-3 hours.

4. **Add Cheese and Onions:**
Stir in the shredded mozzarella and provolone cheeses along with the fried onions. Cover and cook for an additional 15-20 minutes, or until the cheeses are melted.
