Creamy, cheesy, and loaded with tender potatoes and savory ham.
Ingredients
4 cups diced potatoes (peeled or unpeeled)
2 cups cooked ham, diced
1 small onion, finely chopped
2 cups shredded cheddar cheese (divided)
1 can (10.5 oz) cream of chicken or mushroom soup
1 cup milk (or unsweetened almond milk)
2 tbsp butter, melted
½ tsp paprika
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
In a large bowl, mix soup, milk, melted butter, paprika, salt, and pepper.
In your crockpot, layer potatoes, ham, onion, and 1 ½ cups of cheese.
Pour the soup mixture evenly over the top. Stir gently to combine.
Cover and cook on low for 6–7 hours or high for 3–4 hours, until potatoes are tender.
In the last 10 minutes, sprinkle remaining cheese on top and let it melt.
Garnish with chopped parsley before serving warm.
