Ingredients

🥬 2 cups kale (chopped)

🥕 1 cup shredded carrots

🥒 1 cup cucumber (diced)

🍋 Juice of 1 lemon

🛢️ 2 tbsp olive oil

🧂 Salt & pepper to taste


Instructions

🥗 In a large bowl, combine kale, carrots, cucumber, red cabbage, seeds/nuts, and fruit (if using).

🍋 In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.

🥄 Pour dressing over the salad and toss well to combine.

❄️ Let sit for 10 minutes before serving to soften the kale and blend flavors.
