1 cup shredded carrots
1 cup cucumber (diced)
1/2 cup red cabbage (shredded)
1/4 cup sunflower seeds or almonds
1/2 cup diced apple or mango (optional sweet crunch)
Juice of 1 lemon
2 tbsp olive oil
Salt & pepper to taste
Instructions
In a large bowl, combine kale, carrots, cucumber, red cabbage, seeds/nuts, and fruit (if using).
In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
Pour dressing over the salad and toss well to combine.
Let sit for 10 minutes before serving to soften the kale and blend flavors.
