Easter Spinach Artichoke Dip: A Festive and Keto-Friendly Appetizer

Ingredients

INGREDIENTS:
🥬 2 tsp Olive oil
🥬 4 oz Fresh spinach
🥬 4 oz Cream cheese
🥬 2 tbsp Mayonnaise
🥬 2 tbsp Sour cream
🥬 1/4 cup Grated parmesan cheese
🥬 1 (14.5 oz) can Artichoke hearts (drained, chopped)
🥬 4 cloves Garlic (minced)
🥬 1/4 tsp Black pepper
🥬 2/3 cup Mozzarella cheese (shredded, divided)


Instructions

1. Heat olive oil in a skillet over medium heat. Add spinach and cook until wilted.
2. Preheat oven to 350°F (177°C).
3. In a bowl, mix cream cheese, mayo, sour cream, parmesan, artichokes, garlic, black pepper, and half mozzarella.
4. Squeeze excess water from spinach and add to the mixture.
5. Transfer to a baking dish, top with remaining mozzarella, and bake for 20-30 minutes until bubbly.
