Ingredients
INGREDIENTS: 1 Tablespoon olive oil
¾ cup yellow onion, finely diced
1 rib celery, finely diced
2 cloves garlic, minced
1 lb. ground beef (85% lean)
2 Tablespoons flour
1 Tablespoon tomato paste
½ teaspoon dried thyme
½ cup chicken broth
1 cup brown gravy
Salt/Pepper to taste
1 cup frozen mixed vegetables
3 cups mashed potatoes
Instructions
1. Prepare the mashed potatoes.
2. In a large pan, heat olive oil over medium-high heat. Sauté onions and celery for 3 minutes, then add garlic for 1 minute.
3. Increase heat, add ground beef, and cook until browned. Drain excess grease.
4. Sprinkle flour, add tomato paste and thyme, cooking for 1-2 minutes.
5. Deglaze with chicken broth, scraping the pan for flavor.
6. Stir in half the brown gravy and mixed vegetables. Season with salt and pepper.
7. Transfer to a greased pie pan, spread mashed potatoes on top, and create fork lines.
8. Broil at 550°F for about 5 minutes, watching closely. Serve hot.
