Ingredients
• 1 lb (450g) ground beef or turkey (or plant-based crumbles)
• 1 tbsp olive oil
• 1 small onion, diced
• 1 bell pepper, diced (any color)
• 2 cloves garlic, minced
• 1 cup cooked rice (white, brown, or cauliflower rice)
• 1 can (15 oz) diced tomatoes (with juices)
• 1 tsp cumin
• 1 tsp paprika
• ½ tsp chili powder
• Salt & pepper to taste
• 1 cup shredded cheddar or Mexican cheese blend
• Optional: ½ cup corn or black beans for extra texture
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×9-inch baking dish.
- In a large skillet over medium heat, heat olive oil. Add onion and bell pepper. Sauté 5 minutes until soft.
- Add garlic and ground meat. Cook 6–8 minutes, breaking it apart, until browned. Drain excess fat if needed.
- Stir in cooked rice, diced tomatoes, cumin, paprika, chili powder, salt, and pepper. Add corn or beans if using. Mix well.
- Simmer 5 minutes to let flavors blend.
- Pour mixture into the baking dish and spread evenly.
- Top with shredded cheese.
- Bake 20–25 minutes, until bubbly and golden on top.
- Let cool 5 minutes before serving. Great with a dollop of sour cream or avocado slices!
