Ingredients
• 1 lb (450g) ground turkey
• 1 tbsp olive oil
• 1 small onion, diced
• 1 bell pepper (any color), diced
• 2 cloves garlic, minced
• 1 cup pumpkin puree (unsweetened)
• 1 can (15 oz) diced tomatoes (no salt added)
• 1 can (15 oz) kidney beans, drained and rinsed
• 1 cup low-sodium chicken broth
• 1 tbsp chili powder
• 1 tsp cumin
• ½ tsp smoked paprika
• ½ tsp oregano
• Salt & pepper to taste
• Optional toppings: shredded cheese, Greek yogurt, green onions, avocado
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and bell pepper. Sauté 5 minutes until soft.
- Add garlic and ground turkey. Cook 6–8 minutes, breaking it apart, until browned.
- Stir in chili powder, cumin, smoked paprika, and oregano. Cook 1 minute to toast the spices.
- Add pumpkin puree, diced tomatoes, kidney beans, and chicken broth. Stir well.
- Bring to a simmer. Reduce heat and cook 20–25 minutes, stirring occasionally, until thickened and flavors blend.
- Season with salt and pepper to taste.
- Serve hot in bowls, topped with your favorites—cheese, yogurt, avocado, or green onions!
