Ingredients
• 1 lb (450g) boneless chicken breast, thinly sliced
• 2 tbsp olive oil (divided)
• 1/3 cup low-sugar ketchup
• 2 tbsp soy sauce (or tamari for gluten-free)
• 1 tbsp sriracha (adjust to taste)
• 1 tbsp honey or maple syrup
• 1 clove garlic, minced
• 1 tsp ginger, grated
• 1 green onion, sliced (for garnish)
• Sesame seeds (optional, for topping)
Instructions
- Heat 1 tbsp olive oil in a large skillet over medium-high heat.
- Add chicken and cook 5–6 minutes, until golden and cooked through. Remove and set aside.
- In the same pan, add remaining 1 tbsp oil. Pour in ketchup, soy sauce, sriracha, honey, garlic, and ginger.
- Stir and simmer 2–3 minutes until sauce thickens slightly.
- Return chicken to the pan. Toss to coat and cook 2 more minutes, letting flavors soak in.
- Serve hot over cauliflower rice, quinoa, or zoodles. Garnish with green onions and sesame seeds.
