Ingredients
2 cups cooked shredded chicken breast
¾ cup Greek yogurt
½ cup grated cucumber (squeezed dry)
1 garlic clove, minced
1 tbsp fresh dill (or 1 tsp dried)
1 tbsp lemon juice
Salt & pepper to taste
½ cup cherry tomatoes, halved
¼ cup red onion, thinly sliced
¼ cup crumbled feta cheese
¼ cup Kalamata olives, sliced
Instructions
In a bowl, mix Greek yogurt, cucumber, garlic, dill, lemon juice, salt, and pepper to make the tzatziki dressing.
Add shredded chicken to the dressing and toss to coat.
Gently fold in cherry tomatoes, red onion, feta, and olives.
Chill for 15–20 minutes before serving for best flavor.
Serve on its own, in lettuce wraps, or with pita.
