Crispy chicken, creamy street corn, and zesty toppings wrapped in a taco dream!
Ingredients
For the Tacos:
8 small flour or corn tortillas
1 lb boneless chicken breast or thighs, cut into strips
½ cup buttermilk
1 cup flour
½ cup cornmeal (optional, for extra crunch)
1 tsp paprika
1 tsp garlic powder
Salt & pepper to taste
Oil for frying
For the Street Corn Topping:
1½ cups corn kernels (fresh, canned, or frozen)
¼ cup mayo or sour cream
¼ cup cotija or feta cheese, crumbled
1 tbsp lime juice
½ tsp chili powder
1 tbsp chopped cilantro
Instructions
Marinate chicken in buttermilk for 20–30 minutes.
In a bowl, mix flour, cornmeal, paprika, garlic powder, salt, and pepper.
Heat oil in a skillet. Dredge chicken in the flour mixture and fry until golden and cooked through. Drain on paper towels.
Mix corn, mayo, cheese, lime juice, chili powder, and cilantro in a bowl.
Warm tortillas and fill each with fried chicken and a generous scoop of street corn topping.
Garnish with extra cilantro, lime wedges, or hot sauce if desired!
